忌廉

忌廉是统称，为新鲜白色的牛奶制成液体，乳脂含量较牛奶高。另外，忌廉中含有反式脂肪，而且以人造奶油，酥烤油的含量最多。大多数的人都以为动物性油所含的饱和脂肪酸高於植物油，於是在烤吐司，酥烤面包时改涂植物性奶油，或是改用植物性油脂来烹煮。但事实却是植物奶油中的反式脂肪酸一样对人体有害，而且危害可能甚於动物性油脂。

鲜忌廉是西点制作的素材之一，无法在家里制造，但在一般大型超市的乳品冷藏柜都可买到。忌廉汤（chowder）是外国食品，就是在汤里放了奶油，使汤更浓稠，使汤有口感还有营养，也可以做成忌廉蛋糕。
