干姜是生姜的干品。生姜系多年生草本，高40～100cm。叶2列，线状披针形，长15～30cm，宽约2cm，光滑无毛。花茎自根茎生出，高约20cm；穗状花序卵形至椭圆形；苞片淡绿色，卵圆形；花冠黄绿色，裂片披针形；唇瓣中央裂片长圆状倒卵形，较花冠裂片短，有淡紫色条纹及淡黄色斑点；雄蕊微紫色。本品栽培时很少开花。 我国大部分地区有栽培。主产四川、贵州。 冬季采挖，除去茎叶及须根，洗净晒干或低温干燥后，即成干姜。
